Elegant Apricot Pistachio Loaf Cake

Ingredients:
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup Greek yogurt
1 cup diced apricots
1/2 cup chopped pistachios
1/4 cup milk
Drizzle:
1 cup powdered sugar
2-3 tbsp milk
1/4 cup chopped pistachios for garnish
Directions:
1. Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper for easy removal.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Gradually add the dry ingredients to the butter mixture, alternating with the Greek yogurt, beginning and ending with the dry mixture. Mix until just combined.
