    Smoked Spanish Chicken Halves

     

    Smoked Spanish Chicken Halves

    Ingredients:

    For the Chicken:
    – 1 Whole Chicken (4-5 lbs)
    – 1 Pack Mini petite potatoes, diced
    – 1 Whole Carrot, diced
    – 1 Whole Zucchini, diced
    – 1 Whole Squash, diced
    – 3 Tbsp Beef tallow
    – 2 Tbsp Garlic salt (for the veggies)

    Chicken Dry Rub:
    – 1 Tbsp Kosher salt
    – 1 Tbsp Black pepper
    – 2 Tsp Garlic powder
    – 2 Tsp Smoked paprika
    – 1 Tsp Onion powder
    – 1 Tsp Oregano
    – 1 Tsp Chili powder
    – 1 Tsp Dry mustard powder

    Veggie Paste:
    – 1 Whole Onion, quartered
    – 1 Whole Tomato, quartered
    – 1 Whole Green bell pepper, quartered
    – ½ Red bell pepper, quartered
    – ½ Jalapeño, seeded
    – 6 Cloves Garlic
    – 1 Lemon, juiced
    – 3 Tbsp Olive oil
    – ½ Cup Parsley
    – Salt to taste

    Instructions:

    1. Start by spatchcocking the chicken (removing the backbone) and halving it, which helps ensure even cooking and delicious smoky flavors.
    2. Generously season the chicken halves with the dry rub, blending the bold flavors of smoked paprika, garlic powder, and chili powder. This step is key for a flavorful Spanish-style chicken.
    3. Prepare a roasting pan by adding diced petite potatoes, carrots, zucchini, and squash. Drizzle the veggies with beef tallow and sprinkle with garlic salt for a savory touch.
    4. Preheat your smoker to 275°F and place the chicken halves on a wire grate above the seasoned veggies.
    5. As the chicken smokes, monitor the internal temperature.

    When the chicken reaches 135°F, it’s time to prepare the vibrant veggie paste.

    This paste, packed with onions, tomatoes, bell peppers, and parsley, brings a fresh, zesty flavor that complements the smoky chicken.

    6. Once the paste is ready, apply it generously to the chicken halves.

    Continue smoking until the chicken reaches an internal temperature of 165°F.
    7. Serve these Smoked Spanish Chicken Halves alongside the flavorful roasted veggies. Enjoy with family and friends for a hearty, comforting meal.
