    Ingredients:

    Crust:
    – 2 cups graham cracker crumbs
    – 1/4 cup unsalted butter, melted

    Lemon Layer:
    – 16 oz (450g) cream cheese, softened
    – 1/2 cup granulated sugar
    – 1/4 cup fresh lemon juice
    – Zest of 1 lemon
    – 1 teaspoon vanilla extract
    – 1 cup whipped cream

    Strawberry Layer:
    – 2 cups fresh strawberries, chopped
    – 1/4 cup granulated sugar
    – 1 tablespoon lemon juice
    – 1 cup whipped cream

    For Garnish:
    – Sliced strawberries
    – Lemon slices
    – Fresh mint leaves

    Instructions:

    1. Preheat Oven: Set your oven to 325°F (163°C) and grease a 9-inch springform pan.

    2. Prepare the Crust: Mix graham cracker crumbs with melted butter in a bowl. Press this mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, then let it cool completely.

    3. Make the Lemon Layer: Beat softened cream cheese in a large bowl until smooth. Blend in granulated sugar, fresh lemon juice, lemon zest, and vanilla extract. Gently fold in whipped cream until combined. Spread this lemon mixture over the cooled crust.

    4. Prepare the Strawberry Layer: Puree fresh strawberries with granulated sugar and lemon juice in a blender until smooth. Fold in whipped cream. Carefully spread this strawberry mixture over the lemon layer.

    5. Chill: Refrigerate the cake for at least 4 hours, or overnight, to allow it to set properly.

    6. Garnish and Serve: Before serving, decorate the top with sliced strawberries, lemon slices, and fresh mint leaves.
