    Peach Raspberry Cheesecake

     

     

    This Peach Raspberry Cheesecake is a refreshing, no-bake dessert that perfectly blends the sweetness of fresh peaches with the tartness of juicy raspberries. The creamy filling, made with whipped cream and cream cheese, sits on a buttery graham cracker crust, creating a dreamy texture in every bite. The peach preserves drizzled on top add a lovely finishing touch, enhancing the fruity flavors. It’s an easy yet elegant dessert, ideal for summer gatherings or any occasion that calls for something sweet and special. With just a few simple steps, you can create a cheesecake that’s sure to delight everyone at the table!

    Ingredients:

    – 1 1/2 cups graham cracker crumbs
    – 1/4 cup granulated sugar
    – 1/2 cup unsalted butter, melted
    – 3 (8 oz) packages cream cheese, softened
    – 1 cup powdered sugar
    – 1 teaspoon vanilla extract
    – 1 cup heavy cream
    – 1 cup fresh peaches, peeled and diced
    – 1 cup fresh raspberries
    – 1/4 cup peach preserves

    Instructions:

    1. Create the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.

    2. Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese and powdered sugar together until the mixture is smooth and creamy. Stir in the vanilla extract until fully blended.

    3. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. This will add a light, airy texture to the cheesecake.

    4. Combine the Mixtures: Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Carefully fold in the diced peaches and fresh raspberries.

    5. Assemble the Cheesecake: Pour the filling over the prepared crust, spreading it out evenly in the springform pan.

    6. Chill to Set: Refrigerate the cheesecake for at least 4 hours, or until fully set and firm.

    7. Finish with Peach Preserves: Just before serving, warm the peach preserves in the microwave for a few seconds until they’re easy to drizzle. Pour the preserves over the top of the cheesecake for a beautiful finish.
