Ingredients:

– 4 boneless, skinless chicken breasts
– 1 teaspoon chili powder

– 1 teaspoon onion powder
– 1/2 teaspoon crushed red pepper flakes
– 1/2 teaspoon dried oregano
– 2 teaspoons paprika
– 1 1/2 teaspoons ground cumin
– 1/2 teaspoon salt
– 1/4 teaspoon pepper
For the Cheese Sauce:
– 2 tablespoons flour
– 2 tablespoons butter
– 1 cup milk
– 1/4 teaspoon salt
– 1/8 teaspoon cayenne pepper
– 1/4 teaspoon paprika
– 1 cup extra sharp cheddar cheese, shredded
Instructions:
Prepare the Chicken:
1. In a small bowl, mix together the chili powder, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, cumin, salt, and pepper.
2. Rub this spice mixture generously on both sides of each chicken breast.
3. Preheat your grill to medium-high heat. Place the seasoned chicken breasts on the grill and cook for 6 to 8 minutes per side, or until the internal temperature reaches 165°F.
4. Once cooked, set the chicken aside to rest.
Make the Cheese Sauce:
1. In a medium saucepan, melt the butter over medium heat.
2. Whisk in the flour and cook for about 1 minute, until it starts to bubble.
3. Gradually pour in the milk, whisking continuously to prevent any lumps from forming.
4. Continue heating the mixture until it’s hot, but not boiling, and then gradually stir in the shredded cheddar cheese.
5. Keep stirring until the cheese is fully melted and the sauce is smooth.
6. Add the paprika and cayenne pepper, and adjust the salt to taste.
