    Mediterranean Herb-Crusted Salmon Recipe.

     

    This dish is ideal for anyone looking to add a delicious, nutrient-rich seafood meal to their weekly menu.

    Ingredients:

    – 4 salmon fillets
    – 2 tablespoons olive oil
    – 1 lemon, thinly sliced
    – 1 cup cherry tomatoes, halved
    – 1/4 cup Kalamata olives, pitted and halved
    – 1/4 cup red onion, thinly sliced
    – 2 tablespoons fresh parsley, chopped
    – 2 cloves garlic, minced
    – 1 teaspoon dried oregano
    – Salt and pepper to taste

    Instructions:

    1. Preheat Oven: Preheat your oven to 375°F (190°C).

    2. Prepare Salmon: Place the salmon fillets on a baking sheet lined with parchment paper.

    3. Season Salmon: Drizzle olive oil over the salmon fillets. In a small bowl, mix together minced garlic, dried oregano, salt, and pepper. Sprinkle this mixture over the salmon fillets.

    4. Add Veggies: Arrange lemon slices, cherry tomatoes, Kalamata olives, and red onion around the salmon on the baking sheet.

    5. Bake: Bake the salmon for 20-25 minutes, or until it is cooked through and flakes easily with a fork.

    6. Garnish and Serve: Remove from the oven and sprinkle fresh parsley over the top before serving.
