    This recipe features tender white fish like cod or hake, perfectly coated in a crispy batter made from all-purpose flour, cornstarch, and a hint of cayenne pepper for a subtle kick.

    Ingredients:
    – 2 pounds cod, hake, or other white fish
    – 1 1/2 cups all-purpose flour
    – 1/2 cup cornstarch
    – 1 tablespoon baking powder
    – 2 teaspoons kosher salt
    – 1/2 teaspoon cayenne pepper
    – 1 1/2 cups water
    – Vegetable oil for frying

    Directions:

    Prepare the Oil:
    1- Preheat the oil to 350°F in a deep fryer or a medium-sized saucepan.

    Make the Batter:
    2- In a medium bowl, combine the all-purpose flour, cornstarch, baking powder, kosher salt, and cayenne pepper.
    3- Whisk in the water until the batter is smooth and slightly foamy.

    Prepare the Fish:
    4- Pat the fish dry with a paper towel to remove excess moisture.
    5- Dip each fish fillet into the batter, ensuring it is fully coated.

    Fry the Fish:
    6- Deep-fry the fillets for 3 to 4 minutes until they are golden brown. If frying multiple pieces, avoid overcrowding the fryer.
    7- Once cooked, let the fish drain on a wire rack.
