    Heavenly Raspberry Chocolate Mousse Cake Recipe

    – 1/4 cup granulated sugar
    – 2 tsp gelatin powder
    – 2 cups heavy cream
    – 1/2 cup confectioners sugar

    For the Chocolate Ganache:
    – 1 cup semi-sweet chocolate chips
    – 1/2 cup heavy cream

    Directions:

    1. Bake the Chocolate Cake:
    – Preheat the oven to 350°F (175°C).
    – In a large bowl, combine flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt.
    – Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
    – Gradually add boiling water, mixing until the batter is smooth.
    – Pour the batter into prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
    – Let the cakes cool completely.

    2. Prepare the Raspberry Mousse:
    – Blend fresh raspberries and granulated sugar until smooth.
    – Bloom gelatin in a small amount of water, then heat until dissolved and add to the raspberry puree.
    – Whip heavy cream with confectioners sugar until stiff peaks form.
    – Fold the whipped cream into the raspberry mixture. Chill until set.

    3. Assemble the Cake:
    – Layer chocolate cake with raspberry mousse, repeating as desired.
    – Chill the cake to set the mousse layers.

    4. Prepare the Chocolate Ganache:
    – Heat heavy cream until simmering.
    – Pour the hot cream over the chocolate chips. Stir until smooth and glossy.
