Ingredients:
1 pre-baked 9-inch pie crust
4 cups fresh strawberries, hulled and halved
1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
1 teaspoon lemon juice
Whipped cream (for serving, optional)
Instructions:
Begin by arranging the halved strawberries in the pre-baked pie crust. Make sure they’re evenly distributed.
In a saucepan, mix together the sugar and cornstarch. Gradually add in the water while stirring to avoid lumps.
Place the saucepan over medium heat and bring the mixture to a boil. Allow it to cook for about 2 minutes, stirring constantly, until the mixture becomes thick and clear.
Remove the saucepan from the heat and stir in the lemon juice.
Carefully pour the sugar mixture over the strawberries in the pie crust. Gently stir to coat the strawberries evenly with the mixture.
Let the pie cool at room temperature for a while, then refrigerate it for at least 2-3 hours or until the filling is set.
Once the pie is chilled and set, you can serve it with whipped cream if desired.
Enjoy your delicious homemade fresh strawberry pie!
