Ingredients
2 pounds shrimp, cooked and cooled
4 Roma tomatoes, finely chopped
1 white onion, finely chopped
2 jalapeños, finely chopped
1/2 cup cilantro, chopped
2 cups ketchup
2 cups Clamato juice
Juice of 1 orange
1/4 cup fresh lime juice
2 tablespoons hot sauce
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons garlic powder
Avocados, for serving
Saltine crackers or tostadas, for serving
Directions
In a large bowl, combine the chopped tomatoes, onion, jalapeños, and cilantro.
You can chop the vegetables as fine or as chunky as you prefer.
If starting with raw shrimp, boil them until just cooked, then drain and let them cool completely.
Leave half of the shrimp whole and chop the other half into bite-sized pieces.
Add all the shrimp to the bowl with the vegetables.
Pour in the Clamato juice, ketchup, orange juice, lime juice, and hot sauce. Add salt, black pepper, and garlic powder. Mix well until everything is fully combined.
Taste and adjust seasoning or heat level as needed.
If serving immediately, gently fold in 1 to 2 diced avocados just before serving. If meal prepping, add avocado only to individual portions when ready to eat to keep it fresh.
