Ingredients:
2 duck breasts
3 tbsp honey
2 tbsp balsamic vinegar
Salt and black pepper
1 sprig of thyme (optional)
Preparation:
Score the skin in a crisscross pattern, season with salt and pepper.
Pan-fry skin-side down for 6–8 minutes until golden brown. Remove excess fat.
3–4 minutes for medium-rare. Let rest under aluminum foil.
Add the honey and vinegar to the pan, stir in the juices, and reduce. Add the thyme for flavor.
Slice the duck breasts and coat with the sauce. Serve with mashed potatoes, roasted vegetables, or sautéed potatoes.
