    Creamy Tuscan Chicken Gnocchi with Spinach & Sun-Dried Tomatoes

    1 cup sun-dried tomatoes (drained + chopped)
    3 cups fresh spinach
    1 ½ cups heavy cream
    1 cup low-sodium chicken broth
    ¾ cup grated Parmesan cheese
    3 cloves garlic, minced
    Optional: red pepper flake

    Directions:

    Cook the Gnocchi: Boil gnocchi in salted water until they float. Drain and set aside.
    Sauté the Chicken: Heat olive oil in a large skillet. Season chicken with garlic powder, Italian seasoning, salt, and pepper. Cook 5–7 minutes until golden and cooked through. Remove and set aside.
    Make the Creamy Tuscan Sauce: In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes. Add chicken broth and heavy cream, stirring until combined. Simmer gently.
    Add Spinach & Parmesan: Stir in fresh spinach until wilted. Gradually add Parmesan, creating a rich and creamy Tuscan sauce.
    Combine Everything: Return chicken and gnocchi to the skillet. Toss to coat in the sauce. Cook 2–3 minutes until heated through.
