    Roasted Red Pepper, Spinach & Mozzarella Stuffed Chicken Breast

    Juicy chicken breasts stuffed with roasted red peppers, fresh spinach, and gooey mozzarella cheese. A flavorful, healthy, and family-friendly dinner recipe that’s ready in under 40 minutes!

    Ingredients (4 Servings):

    4 boneless, skinless chicken breasts
    1 teaspoon garlic powder
    1 teaspoon paprika
    ½ teaspoon salt
    ½ teaspoon black pepper
    1 tablespoon olive oil
    1 cup fresh spinach leaves
    1 roasted red pepper (jarred or freshly roasted), sliced
    1 cup shredded mozzarella cheese
    Toothpicks or kitchen twine (for securing chicken)

    Instructions:

    Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.

    Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through.

    Rub both sides of the chicken with garlic powder, paprika, salt, and black pepper.

    Fill each chicken breast with fresh spinach, roasted red pepper slices, and shredded mozzarella. Secure with toothpicks or twine.

    Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2–3 minutes on each side until golden brown.

    Transfer chicken to the baking dish and bake for 20–25 minutes, or until cooked through (internal temp 165°F / 74°C).

    Remove toothpicks or twine before serving. Pair with roasted vegetables, salad, or fluffy rice.

    Recipe Tips

    Swap mozzarella for provolone, gouda, or feta for extra flavor.
    Add sun-dried tomatoes or mushrooms to the stuffing for variety.
    Perfect for meal prep just reheat for a quick lunch or dinner.
