Fajita Chicken Casserole Recipe
This Fajita Chicken Casserole is the ultimate weeknight dinner! Loaded with shredded chicken, fajita seasoning, rice, peppers, and plenty of melted cheese, this creamy chicken casserole is a Tex-Mex favorite the whole family will love.
Ingredients:
4 cups shredded cooked chicken (about 3 large chicken breasts)
2 cups instant rice
1 (10.5 oz) can cream of chicken soup
1 cup sour cream
1 cup frozen diced onion and bell pepper blend
1 (10 oz) can diced tomatoes with chilies, undrained
1 ½ cups chicken broth
1 (1.12 oz) packet fajita seasoning mix
2 cups (8 oz) shredded Mexican blend cheese
Directions:
Preheat Oven Set oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish with nonstick spray.
Combine Ingredients In a large mixing bowl, stir together shredded chicken, uncooked rice, cream of chicken soup, sour cream, onion and bell pepper blend, diced tomatoes with chilies, chicken broth, fajita seasoning, and half the shredded cheese.
Bake Covered Pour mixture into the casserole dish. Cover with foil and bake for 35 minutes.
Top with Cheese Remove foil, sprinkle the rest of the cheese on top, and bake uncovered for another 10 minutes until golden and bubbly.
Serve Garnish with fresh cilantro, avocado slices, or jalapeños.
