    Honey Pepper Chicken Lo Mein with Steamed Rice

    Looking for a quick and easy chicken dinner recipe that’s full of flavor? This Honey Pepper Chicken Lo Mein is the perfect choice for busy weeknights, a light yet satisfying meal for seniors, and a family-friendly comfort food dish that everyone will love. The sweet honey, savory soy sauce, and touch of pepper create a balanced stir-fry sauce that pairs beautifully with tender chicken, fresh veggies, lo mein noodles, and fluffy steamed rice.

     

    Ingredients (4 servings):

    1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

    1 tbsp olive oil

    1 medium onion, chopped

    2 cloves garlic, minced

    1 red bell pepper, sliced

    1 cup broccoli florets

    8 oz dried lo mein noodles

    ½ cup chicken broth

    ¼ cup honey

    2 tbsp low-sodium soy sauce

    1 tbsp rice vinegar

    1 tsp ground ginger

    ½ tsp red pepper flakes (optional, for heat)

    2 cups steamed white rice

    Sesame seeds, for garnish (optional)

     

    Instructions:

    1. Cook the noodles Boil lo mein noodles according to package directions. Drain and set aside.

    2. Cook the chicken Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until golden and fully cooked (5–7 minutes). Remove and set aside.

    3. Sauté the veggies In the same skillet, add onion and bell pepper. Cook for 3–5 minutes until softened. Stir in garlic and broccoli, cooking 2–3 more minutes.

    4. Make the sauce In a small bowl, whisk together chicken broth, honey, soy sauce, rice vinegar, ginger, and red pepper flakes (if using).

    5. Combine Return chicken to the skillet. Pour sauce over chicken and veggies. Simmer for 2–3 minutes until slightly thickened.

    6. Add noodles Toss in the lo mein noodles, coating them with the sauce.

    7. Serve Dish up the Honey Pepper Chicken Lo Mein alongside steamed rice. Garnish with sesame seeds if desired.

     

    Pro Tip:

    This recipe works with brown rice or jasmine rice too. For extra crunch, add snow peas, carrots, or baby corn.
