Ingredients:

For the Chicken:

1 lb chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

Salt and pepper, to taste

Vegetable oil, for frying

For the Bang Bang Sauce:

1/4 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha sauce (adjust for spice)

1 tbsp honey

Instructions:

Marinate the Chicken

In a bowl, combine the chicken and buttermilk. Let it marinate in the refrigerator for at least 30 minutes to ensure juicy and tender bites.

Prepare the Coating

Mix the flour, cornstarch, salt, and pepper in a bowl. Remove the chicken from the buttermilk and coat each piece in the flour mixture. For extra crunch, double-dip in buttermilk and the flour mixture.

Fry to Perfection

Heat about 1 inch of vegetable oil in a skillet over medium-high heat. Fry the coated chicken in small batches for 5-7 minutes until golden and crispy. Let them drain on paper towels.

Make the Bang Bang Sauce

In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth and creamy.

Toss and Serve

Coat the fried chicken pieces in the sauce until evenly covered. Serve warm over rice, in a wrap, on a salad, or enjoy as a snack or appetizer!

Pro Tips:

Adjust the sriracha for a milder or spicier sauce.

Serve with a drizzle of extra sauce for more flavor!

Pair with a side of coleslaw or steamed veggies for a balanced meal.
