The Ultimate Bourbon Glaze Meatloaf Recipe

Ingredients:
Meatloaf:
2 lbs ground beef
1 cup plain bread crumbs
½ cup milk
2 eggs
1 cup onions, diced
1 cup bell pepper, diced
1 jalapeño, diced
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp all-purpose seasoning (Tony’s brand preferred)
2 tbsp Worcestershire sauce
¼ tsp salt and pepper
1 cup shredded cheddar and Monterey Jack cheese
Bourbon Glaze:
1 cup apricot jam
¼ cup dark brown sugar
1 tbsp sriracha
½ cup bourbon
½ cup BBQ sauce
¼ cup water
Instructions:
Prepare the Meatloaf:
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine ground beef, bread crumbs, milk, eggs, diced bell peppers, onions, jalapeño, onion powder, garlic powder, all-purpose seasoning, Worcestershire sauce, salt, and pepper. Mix until evenly combined.
Make the Bourbon Glaze:
1. In a small saucepan, combine apricot jam, dark brown sugar, sriracha, bourbon, BBQ sauce, and water.
2. Heat on low, stirring occasionally, until the mixture is smooth and reaches a boil. Set aside.
Assemble the Meatloaf:
1. Line a baking tray with foil and shape half of the meat mixture into a loaf base.
2. Sprinkle shredded cheese in the center and cover with the remaining meat mixture, shaping it into a compact loaf.
Glaze and Bake:
1. Spread a layer of bourbon glaze over the top of the meatloaf.
2. Bake uncovered for 60 minutes, or until a thermometer reads 155°F in the center.
3. Halfway through baking, baste another layer of glaze on the meatloaf.
4. If additional cooking time is needed, cover with foil and bake for another 15 minutes.
Rest and Serve:
1. Allow the meatloaf to rest for 30 minutes before slicing.
2. Serve with extra bourbon glaze on the side for a flavor-packed meal!
