This rich and comforting beef stew is packed with tender beef, wholesome vegetables, and a flavorful broth perfect for chilly nights!

Ingredients:

2 lbs beef tri-tip, roast, or short ribs

2 tbsp cooking oil

Salt and black pepper, to taste

3 medium carrots, diced

1 large sweet onion, diced

3 medium celery sticks, diced

4 garlic cloves, minced

10 small mushrooms, sliced

2 tbsp butter

2 tbsp all-purpose flour

1 cup beef broth (substituting for red wine)

1 cup tomato sauce

2 tbsp Worcestershire sauce

4 cups beef broth

2 1/2 tsp Italian herbs blend

1 tsp smoked paprika

1/2 tbsp sugar

Ground black pepper, to taste

3 to 4 cups halved baby potatoes

1 cup fresh or frozen sweet peas

2 tbsp fresh chopped parsley

Instructions:

1. Sear the Beef: Cut the beef into 1 1/2-inch chunks. Preheat a large frying pan over medium-high heat and add cooking oil. Once hot, add the beef, season with salt and black pepper, and sear for 7-10 minutes until browned. Transfer to a large soup pot. Deglaze the pan with 1/2 cup beef broth and add the liquid to the pot.

2. Sauté the Veggies: In the same pan, add 1 tbsp oil and sauté the carrots, celery, and onion for 4-5 minutes until onions are soft. Add the garlic and cook for 1 more minute. Transfer to the soup pot.

3. Cook the Mushrooms: Melt butter in the pan, add mushrooms, and sauté for 4-5 minutes until golden. Season with salt, then add flour and stir to coat. Cook for 1 minute and transfer to the soup pot.

4. Build the Broth: Add 1 cup beef broth, tomato sauce, Worcestershire sauce, 4 cups beef broth, Italian herbs, smoked paprika, sugar, salt, and black pepper to the pot. Stir well.

5. Simmer to Perfection: Cover and bring to a boil over high heat. Reduce heat to low and simmer for 1 to 1 1/2 hours until the beef is tender.

6. Add the Final Touches: Stir in baby potatoes and cook for another 20-25 minutes until tender. Add sweet peas and cook for 5 more minutes.

7. Garnish & Serve: Sprinkle with fresh parsley and serve warm!
