    Ingredients:

    1 tablespoon vegetable or canola oil

    1 (3 to 4-pound) chuck roast

    1/2 teaspoon salt

    1/2 cup chopped onion

    4 garlic cloves, minced

    3/4 cup beef broth

    1/3 cup balsamic vinegar (use high-quality, thick vinegar for the best flavor)

    2 tablespoons packed light brown sugar

    1 tablespoon soy sauce

    1 tablespoon Worcestershire sauce

    1/2 teaspoon red pepper flakes

    1/2 teaspoon black pepper

    1/4 teaspoon dried thyme

    1 bay leaf

    Instructions:

    1. Prepare the Roast:
    Pat the chuck roast dry with paper towels and season it lightly with salt.

    2. Sear for Flavor:
    Heat the oil in a large skillet over medium-high heat. Add the roast and sear until browned on both sides, about 2 minutes per side.

    3. Layer Ingredients in Crock Pot:
    Place the chopped onion and minced garlic in the bottom of a 6 to 7-quart crock pot. Add the browned roast on top, along with any juices from the skillet.

    4. Mix the Sauce:
    In a small bowl, whisk together the beef broth, balsamic vinegar, light brown sugar, soy sauce, Worcestershire sauce, red pepper flakes, black pepper, and thyme.

    5. Slow Cook to Perfection:
    Pour the mixture over the roast. Add the bay leaf. Cover and cook on HIGH for 4 hours or LOW for 6-8 hours, until the beef is tender and easily shredded.

    6. Shred and Serve:
    Remove the beef from the crock pot and shred it with two forks. Skim off any excess fat from the cooking liquid or use a fat separator. Pour the flavorful juices back over the shredded beef.

    7. Optional Reduction:
    For a richer flavor, transfer the cooking liquid to a saucepan and boil for 3-5 minutes to reduce slightly. You can also add a splash of balsamic vinegar for an extra tangy kick.

    8. Season and Enjoy:
    Taste and adjust seasoning with additional salt, if needed. Serve hot with mashed potatoes, rice, or crusty bread for the ultimate comfort meal!
