    Tender Braised Beef Short Ribs Recipe

     

    These fall-off-the-bone braised beef short ribs are slow-cooked in a rich, savory broth infused with garlic, herbs, and vegetables no red wine required! It’s the perfect comfort food for cozy nights or special dinners. Plus, it’s an easy one-pot meal with stove, oven, slow cooker, and Instant Pot options!

    Ingredients:

    5–6 bone-in beef short ribs (300–400g / 10–14 oz each)

    1.5 tsp sea salt and 1.5 tsp black pepper

    2 tbsp olive oil

    3 garlic cloves, crushed

    1 large onion, chopped

    2 celery ribs, chopped

    2 carrots, chopped

    2 tbsp tomato paste

    2 cups (500ml) low sodium beef broth or stock

    2 sprigs fresh thyme (optional)

    2 bay leaves

    Instructions:

    1. Preheat oven to 160°C / 325°F.

    2. Season beef ribs generously with salt and pepper.

    3. In a large oven-safe pot or Dutch oven, heat olive oil over high heat. Sear ribs in batches until browned all over (5–7 mins per batch). Remove and set aside.

    4. Reduce heat to medium. Add onions and garlic, sauté for 2 minutes.

    5. Add celery and carrots, cooking for 5 minutes until softened and slightly caramelized.

    6. Stir in tomato paste, cooking for 1 minute to deepen flavor.

    7. Pour in beef broth, add thyme and bay leaves. Mix until well combined.

    8. Return the beef ribs to the pot, ensuring they are mostly submerged in the liquid.

    9. Cover with a lid and braise in the oven for 3 hours, until meat is fork-tender.

    10. Carefully remove the ribs and cover to keep warm.

    11. Strain the cooking liquid, pressing on solids to extract maximum flavor. Return the strained sauce to the pot, simmer to reduce/thicken, or add water to adjust consistency. Season to taste.

    12. Serve ribs hot with sauce spooned over. Delicious with mashed potatoes, rice, or crusty bread!

    Alternative Cooking Methods:

    Stovetop: Simmer covered on low heat for 2.5 hours.
    Slow Cooker: Cook on low for 8 hours or high for 5 hours. Sear meat and sauté veggies before transferring.
    Pressure Cooker: Cook on high for 1 hour, natural release for 10 minutes.
    Instant Pot: Sear and sauté in the pot, then cook using pressure or slow cooker mode as above.
