This recipe is for stuffed bell peppers filled with a savory mixture of ground beef, onion, and Spanish-flavored Rice-a-Roni. The peppers are parboiled, then filled with the beef and rice mixture. A tomato sauce with a touch of sugar is poured around the peppers before baking. After baking, the peppers are topped with shredded cheese and baked again until the cheese is melted. It’s a delicious and comforting dish that combines the flavors of beef, rice, and cheese with the sweetness of the bell peppers.
