Steak and Shrimp Scampi Linguine

Ingredients:
– For the Linguine:
– ½ lb. linguine
– 2 Tbsp unsalted butter
– 2 Tbsp olive oil
– 1 Tbsp minced garlic
– ¼ tsp red pepper flakes
– For the Shrimp Scampi:
– ½ lb. jumbo shrimp, peeled and deveined
– ⅛ tsp salt
– ⅛ tsp pepper
– ⅓ cup white wine or chicken broth
– 3 Tbsp lemon juice
– 3 Tbsp finely chopped parsley, plus extra for garnish
– For the Garlic Butter Steak:
– ½ lb. NY Strip Steak
– ½ tsp coarse salt
– ⅛ tsp black pepper
– ½ Tbsp oil (avocado or canola)
– 1 Tbsp unsalted butter
– ½ tsp minced garlic
Instructions:
1. Cook the Linguine:
– Bring a large pot of salted water to a boil. Add the linguine and cook until al dente, about 7 minutes. Drain and set aside.
2. Make the Shrimp Scampi:
– Heat butter and olive oil in a large skillet over medium heat. Sauté minced garlic and red pepper flakes for about 1 minute until fragrant.
– Add the shrimp, seasoning with salt and pepper. Cook until the shrimp are pink and fully cooked, around 5 minutes. Remove the shrimp and set them aside.
– Deglaze the skillet with white wine (or chicken broth) and lemon juice, cooking for 1 minute. Remove from heat and stir in the finely chopped parsley.
3. Combine Shrimp and Linguine:
– Return the linguine and shrimp to the skillet, tossing to coat the pasta in the scampi sauce.
4. Cook the Garlic Butter Steak:
– Heat a cast iron skillet over high heat. Season the NY Strip Steak with coarse salt and black pepper, then lightly brush with oil.
– Sear the steak to your desired level of doneness (135°F for medium-rare, 140°F for medium). Remove from heat.
– Mix the butter and minced garlic, then spread it over the hot steak, allowing it to melt. Slice the steak against the grain.
5. Serve:
– Divide the linguine and shrimp scampi between two plates. Top each plate with slices of the garlic butter steak and garnish with additional parsley.
