Ingredients:
Chicken thighs or drumsticks (bone-in, skin-on): 6-8 pieces
Salt: 1 tsp
Black pepper: 1 tsp
Garlic powder: 1 tsp
Onion powder: 1 tsp
Paprika: 1 tsp
Flour: ½ cup (for dredging)
Vegetable oil: 3 tbsp
Onion: 1 large, thinly sliced
Garlic: 3 cloves, minced
Chicken broth: 2 cups
Heavy cream or whole milk: ½ cup
Cooked white rice: 4 cups
Optional Additions:
Sautéed mushrooms for a rich umami boost.
Bell peppers, thinly sliced, for vibrant color.
Cayenne pepper for a hint of spice.
Chopped fresh parsley for garnish.
Instructions:
1. Season & Dredge: Combine salt, pepper, garlic powder, onion powder, and paprika. Rub generously over the chicken, then coat lightly in flour.
2. Brown the Chicken: Heat oil in a large skillet over medium heat. Sear chicken 3-4 minutes per side until golden brown. Remove and set aside.
3. Sauté Vegetables: In the same skillet, cook onions and garlic until soft and aromatic.
4. Create the Gravy: Sprinkle 2 tbsp of flour into the skillet, stirring until smooth. Gradually whisk in chicken broth and cream to create a velvety gravy.
5. Simmer: Add the chicken back to the skillet, reduce heat, cover, and cook for 30-40 minutes. Occasionally spoon gravy over the chicken for extra flavor.
6. Serve: Plate the chicken and gravy over a bed of fluffy white rice. Garnish with parsley, if desired.
Make It Healthier:
Swap skinless chicken or use chicken breasts.
Substitute heavy cream with low-fat milk.
Replace white rice with brown rice for added fiber.
