If you’re craving a hearty, comforting meal, this Slow Cooker Pot Roast is a must-try! Made with a flavorful chuck roast, tender potatoes, carrots, and a rich homemade gravy, this “melt in your mouth” recipe is perfect for family dinners or cozy weekends.

Ingredients:

1 chuck roast (about 3 pounds)

Olive oil (for searing)

1 pound carrots, peeled & cut into large chunks

2 pounds potatoes, peeled & cut into large chunks

1 onion, peeled & quartered

2 stalks celery, chopped (optional)

1 cup beef broth

1 tablespoon cornstarch (for gravy)

Homemade Pot Roast Seasoning:

2 tablespoons steak seasoning (store-bought blend of peppercorns, garlic, paprika, parsley, salt)

1 tablespoon kosher salt

1 tablespoon dried thyme

1 tablespoon dried rosemary

 

Instructions:

1. Mix the Seasoning:
In a small bowl, mix together steak seasoning, salt, thyme, and rosemary.

2. Season & Sear the Chuck Roast:
Rub olive oil onto both sides of the chuck roast. Sprinkle a third of the seasoning on each side. Sear the roast in a hot skillet over medium-high heat until browned (about 2–3 minutes per side). Transfer to your slow cooker.

3. Prep the Vegetables:
In a large bowl, toss the carrots, potatoes, onion, and celery (if using) with a little olive oil. Sprinkle with the remaining seasoning. Add the vegetables to the skillet used for the roast and sauté for 5 minutes, stirring occasionally to enhance flavor.

4. Slow Cook the Roast:
Layer the sautéed vegetables on top of the roast in the slow cooker. Pour in the beef broth. Cover and cook on low for 9 hours or high for 6 hours, until the meat is fall-apart tender.

5. Make the Gravy:
Use a turkey baster to remove most of the juices from the slow cooker. Pour the liquid into a saucepan and bring to a simmer. Whisk cornstarch with a splash of water, then stir into the pan juices. Simmer until thickened. Adjust seasoning to taste.

6. Serve:
Transfer the pot roast and vegetables to a serving platter. Drizzle the thickened gravy over the top. Serve hot and enjoy your tender slow-cooked chuck roast with gravy!
