1/4 cup all-purpose flour
2 teaspoons dried thyme

1 teaspoon garlic powder
1 medium yellow onion, diced
4 medium carrots, peeled and sliced into 1-inch rounds
2 celery stalks, sliced into 1/2-inch pieces
1 pound Yukon gold or red potatoes, cut into 1-inch chunks
2 1/4 pounds boneless beef chuck roast or stew meat, trimmed and cubed
2 dried bay leaves
1 1/2 cups beef broth
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
Chopped fresh parsley (optional, for garnish)
Instructions:
1. Prepare the Flour Mixture:
In a 6-quart slow cooker, mix 1/4 cup all-purpose flour, 2 teaspoons dried thyme, 1 1/2 teaspoons kosher salt, 1 teaspoon black pepper, and 1 teaspoon garlic powder.
2. Prep the Vegetables:
