Slow Cooker Beef Stew

For the Beef:
3 lbs beef chuck roast, cut into 1-inch pieces
½ cup all-purpose flour
1 ½ tsp kosher salt, divided
1 tsp paprika
1 tsp coarse ground black pepper, divided
½ tsp garlic powder
2 tbsp oil or ghee
For the Vegetables & Broth:
4 medium carrots, sliced (about 2 cups)
4 stalks celery, sliced (about 2 cups)
1 large onion, chopped (about 3 cups)
2 cloves garlic, minced
2 tbsp tomato paste
1 lb baby potatoes, cut into 1-inch pieces
3 cups low-sodium beef broth, divided
1 can (14.5 oz) diced tomatoes, undrained
1 sprig fresh rosemary
1 sprig fresh thyme
1 large bay leaf
¼ cup cornstarch
2 cups frozen peas
½ cup chopped fresh parsley
How to Make Crockpot Beef Stew
Step 1: Prep the Beef
In a large bowl, mix flour, 1 tsp salt, paprika, ½ tsp black pepper, and garlic powder. Toss the beef in this mixture until fully coated.
Step 2: Sear the Beef
Heat oil or ghee in a large skillet over medium-high heat. Sear the beef in batches for about 5 minutes per batch. Transfer browned beef to the slow cooker.
Step 3: Sauté the Veggies
In the same pan, add carrots, celery, onion, ½ tsp salt, and ¼ tsp black pepper. Cook for 7-8 minutes until onions soften. Add garlic and cook for another minute.
Step 4: Build Flavor
Stir in any leftover flour mixture, cooking for 1-2 minutes. Add tomato paste and mix well. Pour in ½ cup beef broth, scraping up brown bits from the pan. Let it reduce for 1-2 minutes, then transfer everything to the slow cooker.

Add potatoes, remaining beef broth, diced tomatoes, rosemary, thyme, and bay leaf to the slow cooker. Cover and cook on LOW for 8-9 hours or HIGH for 4-5 hours, until the beef is tender.
Step 6: Thicken the Stew
In a small bowl, whisk together ½ cup beef broth and cornstarch until smooth. Stir into the stew, cover, and cook for another 30 minutes until thickened.
