    Slow Cooker Beef and Broccoli

     

    This Slow Cooker Beef and Broccoli is a delicious, easy meal that combines tender beef chuck roast with flavorful soy sauce and a touch of sesame oil. The beef melts in your mouth, while the broccoli adds a crisp bite. Perfectly paired with white rice or brown rice, it makes for a satisfying dinner. Simply toss the ingredients in the slow cooker and let the magic happen. This beef stir fry is a family favorite that’s ready in just a few hours!

    Ingredients:

    1 1/2 pounds beef chuck roast (boneless, sliced into thin strips)

    1 cup beef consomme or beef broth

    1/2 cup low sodium soy sauce

    1/3 cup dark brown sugar

    1 tbsp. sesame oil

    3 cloves garlic, minced

    1/4 cup cornstarch

    About 3 cups frozen broccoli florets (1 14 oz bag)

    White rice or brown rice, cooked (for serving)

    Instructions:

    1. In a bowl, whisk together the beef consomme, soy sauce, dark brown sugar, sesame oil, and garlic until well combined.

    2. Lay the thinly sliced beef strips in your slow cooker and pour the sauce over the beef. Toss to coat evenly.

    3. Set the slow cooker on low and cook for about 5-6 hours. Keep an eye on the beef; it should be tender but not overcooked to the point of shredding.

    4. About an hour before it’s done, whisk 1/4 cup of the sauce with cornstarch in a small bowl. Slowly stir the mixture into the slow cooker to thicken the sauce.

    5. Add the broccoli florets in the last 30 minutes of cooking to avoid overcooking and turning it mushy.

    6. Serve this beef and broccoli stir fry over a bed of freshly cooked white rice or brown rice for the perfect meal.
