Ingredients:
3 pounds chuck roast
2 tablespoons vegetable oil
1 teaspoon garlic powder
1 teaspoon dried oregano
¼ cup soy sauce
1 cup brewed coffee
1 large white onion, halved and thinly sliced
2 bay leaves
2 tablespoons cornstarch
3 tablespoons cold water
Freshly ground black pepper (to taste)
Fresh chopped parsley (optional, for garnish)
Directions:
Step 1: Sear the Roast
Heat vegetable oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until golden brown but not cooked through. Transfer the roast to your slow cooker.
Step 2: Season the Roast
Sprinkle garlic powder, dried oregano, and freshly ground black pepper over the roast. Massage the spices into the meat for maximum flavor.
Step 3: Add Ingredients
Arrange sliced onions and bay leaves around the roast. Pour coffee, soy sauce, and Worcestershire sauce over the ingredients.
Step 4: Slow Cook
Cover the slow cooker and cook on LOW for 9 hours. Avoid lifting the lid during the first 8.5 hours for consistent heat and tender results.
Step 5: Prepare the Gravy
After 9 hours, remove the roast and cover it with foil. Skim excess grease from the surface of the crockpot.
Whisk together cornstarch and cold water in a small bowl. Stir the mixture into the onion gravy, then cook on HIGH for 20 minutes until thickened.
Step 6: Shred and Serve
Shred the roast with two forks and return it to the thickened gravy. Let it warm for 5 minutes.
Serve directly from the slow cooker with a ladle. Garnish with fresh parsley, if desired.
