    Savory Chuck Roast with Blue Cheese Gravy Recipe

    Savory Chuck Roast with Blue Cheese Gravy Recipe

    Ingredients:
    – 3-4 pound chuck roast
    – 2 tablespoons vegetable oil
    – 1 teaspoon kosher salt
    – 1/2 teaspoon coarse ground black pepper
    – 1 yellow onion, halved and thinly sliced
    – 8 small Yukon gold potatoes
    – 2 cups beef broth

     

    – 1 tablespoon Worcestershire sauce
    – 6 sprigs fresh thyme
    – 1/2 cup blue cheese, crumbled
    – 1/2 cup heavy cream

    Directions:
    1. Preheat your oven to 325°F.
    2. Season the chuck roast with kosher salt, black pepper, and thyme.

     

    3. Heat vegetable oil in a pan until it ripples. Add the roast and sear for 4-5 minutes on each side until deeply browned.
    4. Place onions and potatoes around the roast in the pan.
    5. Combine beef broth, Worcestershire sauce, and thyme; pour over the roast.
    6. Cover and cook in the oven for 3 to 3.5 hours.
    7. Remove from oven, discard thyme sprigs, and gently remove the potatoes and roast.

     

    8. Stir in heavy cream and 1/3 cup of blue cheese crumbles into the pan juices on the stovetop over medium-high heat. Whisk until the sauce thickens, about 6-8 minutes.
    9. Break the roast into large chunks, return to the pot, and serve in bowls with halved potatoes and blue cheese gravy, sprinkled with remaining blue cheese crumbles.
