    Refreshing and Nutritious Chickpea Salad Recipe

    Ingredients
    – 1 can (400 g) chickpeas, drained and rinsed
    – 1 cucumber, diced
    – 1 red bell pepper, diced
    – 1 small red onion, finely chopped
    – 1 cup cherry tomatoes, halved
    – 1/4 cup Kalamata olives, pitted and sliced
    – 1/4 cup crumbled feta cheese (optional)
    – 1/4 cup fresh parsley, chopped
    – 1/4 cup fresh mint, chopped (optional)

    For the Dressing
    – 3 tablespoons olive oil
    – 2 tablespoons lemon juice (about 1 lemon)
    – 1 garlic clove, minced
    – 1 teaspoon Dijon mustard
    – Salt and pepper to taste

    Instructions

    1. Prepare the Salad
    – In a large bowl, combine the chickpeas, cucumber, red bell pepper, red onion, cherry tomatoes, Kalamata olives, feta cheese (if using), parsley, and mint (if using).

    2. Prepare the Dressing
    – In a small bowl or jar, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, salt, and pepper until well combined.

    3. Mix the Salad
    – Pour the dressing over the chickpea mixture and gently toss to coat all the ingredients evenly.

    4. Serve
    – Serve the salad immediately or refrigerate for an hour to allow the flavors to blend. This salad can be served cold or at room temperature.

    Tips
    – Feel free to add other ingredients like avocado, spinach, or arugula for extra flavor and texture.
    – You can substitute lemon juice with balsamic vinegar or red wine vinegar for a different tangy taste.
