Potato and Minced Meat Roll
**Ingredients:
*For Potato Roll:*
– 5 large sweet potatoes
– 1 small bowl of grated cheddar cheese (about 100 grams)
– 2 eggs
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon paprika
*For Minced Meat Filling:
– 500 grams minced meat
– 2-3 tablespoons oil
– 1 onion
– 1 hot pepper
– 2 green peppers
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon red pepper powder
– 1 tablespoon tomato paste
– 1 cup water
– 2-3 sprigs mint
*For Bechamel Sauce:
– 1 tablespoon butter
– 1 tablespoon flour
– 1 cup milk (about 300 ml)
– Salt and pepper to taste
Directions:
1. Peel and grate the sweet potatoes. Squeeze out the excess juice and transfer the grated potatoes to a mixing bowl.
2. Add grated cheddar cheese, eggs, black pepper, salt, and hot pepper to the potatoes. Mix until well combined.
3. Press the potato mixture onto a tray lined with parchment paper.
4. Bake in a preheated oven at 190 degrees Celsius until lightly browned on the top and bottom.
*For Minced Meat Filling:*
5. In a pan, fry the minced meat until cooked.
6. Add chopped onions and peppers to the pan and continue frying.
7. Stir in salt, black pepper, red pepper powder, and tomato paste. Cook until fragrant.
8. Pour in hot water and mint. Simmer until the liquid reduces. Remove from heat.
9. Once the potato roll is baked, spread the minced meat filling evenly over it.
10. Carefully roll up the potato roll with the filling inside.
*For Bechamel Sauce:*
11. In a saucepan, melt butter over medium heat. Stir in flour until combined.
12. Gradually pour in milk while stirring constantly until the sauce thickens.
13. Season with salt and pepper to taste.
14. Drizzle the Bechamel sauce over the potato roll.
