Philly Steak Cheese Fries

Ingredients
Cheese Sauce:
– 1 tablespoon butter
– 1 tablespoon flour
– 2 cups milk, warmed
– 8 ounces white American cheese, cubed
– 1/4 cup parmesan cheese
– 1/2 teaspoon salt
– 1/4 teaspoon ground pepper (white or black)
Philly Steak Cheese Fries:
– 1 bag frozen crinkle-cut fries
– 1 pound ribeye steak (see note)
– 2 tablespoons oil, divided
– 1 medium green bell pepper, sliced 1/8″ thick
– 1 medium onion, sliced 1/8″ thick
– 1 recipe Cheese Sauce
Instructions
1. Prepare the Steak:
Start by placing the steak in the freezer for 45 minutes to firm up. Once chilled, slice it into thin 1/8″ strips. Toss the steak strips with 1 tablespoon of oil and set them aside.
2. Cook the Fries:
Bake or fry the crinkle-cut fries according to the package directions until they’re golden and crispy. Keep them warm.
3. Make the Cheese Sauce:
In a medium saucepan, melt the butter. Add the flour, stirring continuously for 1-2 minutes until it turns a light golden color. Gradually whisk in the warmed milk, cooking until the sauce thickens, about 4-5 minutes. Remove from heat, then add the cubed American cheese, stirring until fully melted and smooth. Keep warm on low heat, stirring occasionally.
4. Cook the Steak, Peppers, & Onions:
Heat a large sauté pan over high heat. Add the steak strips, cooking until browned. Remove the steak and set aside. In the same pan, add the remaining oil if necessary, and sauté the bell pepper and onion slices until they are soft and caramelized. Return the steak to the pan, mixing everything together.
5. Assemble the Philly Steak Cheese Fries:
Spread the hot, crispy fries on a serving platter or sheet pan. Top with the steak, pepper, and onion mixture. Generously drizzle half of the cheese sauce over the top, and serve the rest on the side for dipping or additional drizzling.

– Ensure all ingredients are prepped before cooking to avoid overcooking.
– Ribeye steak provides the best flavor, but sirloin, top round, or ground beef can also be used.
