    Mexican Street Corn Soup

     

    This Mexican Street Corn Soup is a creamy, flavorful twist on the classic street food favorite. Packed with charred corn, zesty ancho chili, and chipotle seasoning, it’s a perfect balance of spice and creaminess. Topped with fresh cilantro, lime juice, and cotija cheese, this hearty soup is a satisfying vegetarian meal. The addition of sour cream adds richness, while the garlic and broth bring it all together. Serve this soup for a delicious, crowd-pleasing dish that captures the essence of Mexican street corn!

    Ingredients:

    2 tablespoons vegetable oil

    1 medium yellow onion, diced (about 1 ½ cups)

    6 cups fresh corn kernels (about 8 cobs)

    1 teaspoon salt

    ½ teaspoon pepper

    ½ teaspoon ancho chili powder

    ½ teaspoon chipotle seasoning

    3 teaspoons minced garlic (about 3 cloves)

    4 cups vegetable broth

    ⅔ cup grated cotija cheese

    ½ cup sour cream

    2 tablespoons chopped cilantro

    2 tablespoons lime juice

    Instructions:

    1. Sauté the Veggies: Heat the vegetable oil in a large pot over medium-high heat. Add diced onion, fresh corn kernels, salt, pepper, ancho chili powder, and chipotle seasoning. Cook, stirring occasionally, until the corn becomes slightly charred (about 5-8 minutes).

    2. Add Garlic and Broth: Stir in minced garlic and cook for 1 more minute. Pour in the vegetable broth, grated cotija cheese, and sour cream. Bring the mixture to a gentle boil, stirring to combine the creamy and zesty flavors.

    3. Blend the Soup: Remove 2 cups of corn kernels from the pot and set aside. Blend the remaining soup to a smooth consistency using an immersion blender or a standard blender (be cautious with hot liquids!).

    4. Combine and Garnish: Return the blended soup to the pot, mixing in the reserved corn kernels for added texture. Stir in chopped cilantro and lime juice for a fresh, tangy finish.

    5. Serve and Enjoy: Ladle the soup into bowls and top with extra cotija cheese, a sprinkle of chili powder, and a lime wedge for garnish.
