    Low Carb Blackberry Ricotta Flatbread

    Looking for a sweet-and-savory low carb appetizer or light lunch idea? This Low Carb Blackberry Ricotta Flatbread is gluten-free, keto-inspired, and packed with flavor. It’s the perfect healthy recipe that combines the creaminess of ricotta cheese with the tart sweetness of blackberries all on a grain-free almond flour flatbread!

    Ingredients:

    For the Low Carb Flatbread Crust:

    1 cup almond flour (low carb & gluten-free)

    1/4 cup grated Parmesan cheese

    1 teaspoon baking powder

    1/4 teaspoon salt

    1 large egg

    2 tablespoons olive oil

    For the Topping:

    1/2 cup ricotta cheese

    1/4 cup blackberries (fresh or slightly thawed if frozen)

    1 tablespoon honey or maple syrup (optional for paleo; adjust for keto)

    1 tablespoon chopped fresh mint or basil (optional for herbal freshness)

    Pinch of salt

    Optional Add-ons for Gourmet Flavor:

    Fresh arugula or leafy greens

    Drizzle of balsamic glaze

     

    Instructions:

    1. Preheat & Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

    2. Mix Dry Ingredients: In a mixing bowl, combine almond flour, Parmesan, baking powder, and salt.

    3. Add Wet Ingredients: In another bowl, whisk the egg and olive oil. Stir the wet mixture into the dry ingredients to form a dough.

    4. Shape the Flatbread: Place dough on the lined baking sheet and flatten it into a thin round or rectangular shape (about 1/4 inch thick) using your hands or a rolling pin.

    5. First Bake: Bake for 10–12 minutes, or until lightly golden and firm.

    6. Prepare Topping: In a small bowl, gently combine ricotta, blackberries, honey/maple syrup, herbs (if using), and a pinch of salt.

    7. Assemble Flatbread: Spread the ricotta mixture evenly over the baked crust.

    8. Final Bake: Return to oven and bake for 5–8 more minutes, or until heated through and edges are golden.

    9. Serve & Garnish: Let cool slightly, slice, and top with arugula and a drizzle of balsamic glaze, if desired.
