    Ingredients:
    For the crust:
    – 1 cup graham cracker crumbs
    – 1/4 cup finely ground pistachios
    – 1/4 cup melted unsalted butter

     

    For the lemon curd filling:
    – 1 cup fresh lemon juice
    – 1 tbsp lemon zest
    – 1 cup sugar
    – 8 large egg yolks
    – 1/2 cup unsalted butter, cut into pieces

    For the topping:
    – 1 cup heavy cream
    – 2 tbsp confectioners’ sugar
    – 1/2 tsp vanilla extract
    – Chopped pistachios for garnish

     

     

    Instructions:

    1. Start with the crust: Mix together graham cracker crumbs, ground pistachios, and melted butter until well combined. Press this mixture into tart pans and chill in the refrigerator for about 30 minutes.
    2. Now, onto the lemon curd: In a saucepan over medium heat, whisk together lemon juice, lemon zest, sugar, and egg yolks. Keep whisking until the mixture thickens. Once thickened, remove from heat and stir in the butter until smooth. Pour this luscious lemon curd into the chilled crusts and let them set in the refrigerator for about 2 hours.

     

    3. For the whipped cream topping: Whip the heavy cream, confectioners’ sugar, and vanilla extract together until stiff peaks form.
    4. Once the lemon curd tarts are set, spoon or pipe the whipped cream onto them.
    5. Finally, garnish with chopped pistachios before serving.
