    Lemon Butter Salmon with Roasted Potatoes & Broccoli

     

    Lemon Butter Salmon with Roasted Potatoes & Broccoli

     

    A flavorful, one-pan meal featuring tender pan-seared salmon in a rich garlic lemon butter sauce, served with crispy roasted potatoes and perfectly caramelized broccoli. This easy weeknight dinner is packed with protein, omega-3s, and fresh flavors!

    Ingredients:

    For the Salmon & Veggies:

    4 salmon fillets (skin-on or skinless)

    1 lb baby potatoes (halved)

    2 cups broccoli florets

    2 tablespoons olive oil

    1 teaspoon garlic powder

    Salt and black pepper to taste

    For the Creamy Lemon Butter Sauce:

    3 tablespoons butter

    2 garlic cloves (minced)

    1/2 cup chicken broth

    1/4 cup heavy cream

    2 tablespoons fresh lemon juice

    1 tablespoon fresh parsley (chopped)

    Directions:

    Preheat & Roast the Veggies:
    Preheat your oven to 400°F (200°C). Toss baby potatoes with 1 tablespoon olive oil, garlic powder, salt, and pepper, then spread them on a baking sheet. Roast for 10 minutes.

    Add the Broccoli:
    Toss broccoli with the remaining olive oil, add to the baking sheet, and roast for another 15 minutes, until golden and tender.

    Sear the Salmon:
    Season the fresh salmon fillets with salt and pepper. Heat a skillet over medium-high heat, add a little oil, and sear salmon for 3-4 minutes per side, until crispy and golden. Remove and set aside.

    Make the Creamy Lemon Butter Sauce:
    In the same skillet, melt butter and sauté minced garlic for 1 minute. Pour in the chicken broth, heavy cream, and fresh lemon juice, stirring well. Let the sauce simmer for 3-4 minutes until slightly thickened.

    Bring It All Together:
    Return the salmon to the skillet and spoon the buttery lemon garlic sauce over the fillets. Let it cook for another 2 minutes.

    Serve & Enjoy!
    Plate the perfectly seared salmon with roasted potatoes and broccoli. Drizzle extra lemon butter sauce over the top and garnish with fresh parsley.
