    Irresistible Chocolate Peanut Butter Cup Cake Roll Recipe

    Ingredients:

    For the Cake:
    – 3 large eggs
    – ¾ cup granulated sugar
    – 2 teaspoons brewed coffee or water
    – 1 teaspoon vanilla extract
    – ¼ cup unsweetened cocoa powder
    – ¼ teaspoon salt
    – 1 teaspoon baking powder
    – ¾ cup all-purpose flour
    – Powdered sugar (for rolling)

    For the Filling & Topping:
    – 2 ounces cream cheese, softened
    – ⅓ cup peanut butter
    – 1 cup powdered sugar
    – 1 teaspoon vanilla extract
    – 4 tablespoons heavy whipping cream
    – ⅔ cup heavy whipping cream
    – 7 Reese’s peanut butter cups, chopped (about 1 cup)
    – 1 cup semi-sweet chocolate chips

     

    Directions:

    Make the Cake:
    1. **Preheat Oven:** Preheat your oven to 350°F.
    2. **Prepare Pan:** Line a jelly roll pan with foil and coat with cooking spray.
    3. Mix Wet Ingredients: In a bowl, whisk together eggs, granulated sugar, brewed coffee (or water), and vanilla extract.
    4. Combine Dry Ingredients: Add unsweetened cocoa powder, salt, baking powder, and all-purpose flour to the wet mixture, stirring until well combined.
    5. **Bake:** Spread the batter evenly in the prepared pan and bake for 10-15 minutes, until the cake springs back when lightly touched.
    6. **Roll Cake:** Immediately roll the warm cake in a powdered sugared towel and allow it to cool completely.

     

    Prepare the Filling:
    1. **Cream Ingredients:** Beat softened cream cheese and peanut butter together until smooth.
    2. **Add Sweeteners:** Mix in powdered sugar, vanilla extract, and 4 tablespoons of heavy whipping cream until well combined.
    3. **Fold in Candy:** Fold in the chopped Reese’s peanut butter cups.

    Assemble the Cake Roll:
    1. **Unroll Cake:** Carefully unroll the cooled cake.
    2. **Spread Filling:** Evenly spread the peanut butter filling over the cake.
    3. **Re-Roll Cake:** Gently re-roll the cake without the towel and chill in the refrigerator.

    Make the Topping:
    1. **Prepare Ganache:** Microwave semi-sweet chocolate chips and ⅔ cup heavy whipping cream together until melted and smooth. Whisk and chill until thickened.

     

    Decorate the Cake Roll:
    1. **Apply Ganache:** Pour the chocolate ganache over the chilled cake roll.
    2. **Top with Candy:** Sprinkle more chopped Reese’s peanut butter cups on top.
    3. **Chill and Serve:** Chill the cake roll, slice, and enjoy!
