    Hearty Homemade Vegetable Beef Soup Recipe

    Ingredients:
    – 2 1/2 tablespoons olive oil
    – 3-4 lb chuck roast
    – 7-8 cups low sodium beef broth
    – 1/4 teaspoon fresh ground black pepper
    – 2 bay leaves
    – 1 medium onion, chopped
    – 2 ribs celery, chopped
    – 2 carrots, peeled and chopped
    – 2 cloves garlic, minced
    – 1 teaspoon dried parsley
    – 1/2 teaspoon dried oregano
    – 1/2 teaspoon dried marjoram
    – 1/4 teaspoon dried thyme leaves
    – 1/4 teaspoon dried basil
    – 2 medium Yukon Gold potatoes, diced
    – 1/4 pound green beans, trimmed and cut into 1-inch bite-sized pieces
    – 1 can (14.5 ounces) petite diced tomatoes
    – 1 tablespoon Worcestershire Sauce

    Instructions:
    1. Sear the Beef:
    – Heat 1 1/2 tablespoons of olive oil in a large pot or Dutch oven over medium to medium-high heat. Add the chuck roast and sear on each side until browned. Pour in about 3 cups of beef broth to cover the roast. Add the black pepper and bay leaves. Simmer for about 2 1/2 to 3 hours, or until the meat is fork-tender.

    2. Cook the Vegetables:
    – In another pot, heat the remaining olive oil over medium heat. Add the chopped onion, celery, and carrot. Cook for 5-7 minutes until softened. Lower the heat, then add the minced garlic, dried parsley, oregano, marjoram, thyme, and basil. Stir well and cook for another minute.

    3. Combine Ingredients:
    – Pour the remaining beef broth into the pot with the vegetables. Add the diced potatoes, green beans, diced tomatoes, and Worcestershire Sauce. Scoop about 1 1/2 cups of broth from the pot with the chuck roast (remove bay leaves first) and add it to the vegetable pot. Simmer for 20-30 minutes until the vegetables are tender.

    4. Shred the Beef:
    – Once the chuck roast is done, remove it from the pot and let it cool slightly on a cutting board. Shred the beef using two forks, discarding any fat or cartilage. Return the shredded beef to the pot and heat for about 5 minutes.
