Hearty Beef Barley Soup Recipe for Comfort Food Lovers

Ingredients:
2 lbs chuck roast, trimmed and cut into ¾-inch cubes
3 Tbsp olive oil
1 ½ cups chopped carrots (about 3)
1 cup chopped celery (about 2 ribs)
2 cups chopped yellow onion (1 large)
3 Tbsp tomato paste
1 ½ Tbsp minced garlic (4 cloves)
2 (32 oz) cartons low-sodium chicken or beef broth
1 Tbsp low-sodium soy sauce
2 tsp Worcestershire sauce
2 tsp minced fresh rosemary (or ½ tsp dried)
2 tsp minced fresh thyme (or ½ tsp dried)
Salt and freshly ground black pepper to taste
1 cup pearl barley
3 Tbsp minced fresh parsley
Instructions:
1. Sear the Beef
Heat 1 Tbsp olive oil in a large pot over medium-high heat.
Dab beef dry and add in batches (do not overcrowd).
Season with salt and pepper, sear until golden brown (about 3 minutes per side).
Transfer to a plate and repeat with remaining beef, adding more oil as needed.
2. Sauté the Veggies
Add 1 Tbsp olive oil to the pot.
Sauté carrots, celery, and onion for about 3 minutes.
3. Build the Flavor
Stir in tomato paste and garlic; cook for 1 minute.
Pour in broth, soy sauce, Worcestershire sauce, rosemary, and thyme.
Season with salt and pepper to taste. Return seared beef and its juices to the pot.
4. Simmer for Tenderness
Bring to a simmer, then reduce heat to low. Cover and cook for 45-60 minutes, until beef is tender.
5. Cook the Barley
Add pearl barley, cover, and simmer for another 45-60 minutes, until barley is tender.
6. Add Freshness
Stir in parsley just before serving. Serve warm with crusty bread or crackers.
Slow Cooker Option
Sear the beef in a pot with olive oil.
Transfer to a slow cooker along with all ingredients except parsley.
Cook on low for 7-8 hours. Stir in parsley before serving.
