Here is a healthy, flourless, and sugar-free cookie recipe using your specified ingredients:

    Healthy Energy Cookies Recipe

    Ingredients for Sugar-Free, Flourless Cookies:
    – 70g (2.5 ounces) dried apricots
    – 50g (1.8 ounces) walnuts
    – 70g (2.5 ounces) hazelnuts
    – 30g (1 ounce) pumpkin seeds
    – 40g (1.4 ounces) sunflower seeds
    – 20g (0.7 ounces) sesame seeds
    – 20g (0.7 ounces) flaxseeds
    – 60g (2 ounces) almonds
    – 20g (0.7 ounces) pine nuts
    – 40ml (1.4 ounces) natural honey
    – 1 egg white
    – A pinch of salt

    Instructions for Making Healthy Cookies:

    1. Preheat the Oven:
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper to prepare for baking your healthy energy cookies.

    2. Prepare the Nuts and Seeds:
Coarsely chop the walnuts, hazelnuts, and almonds. Combine them in a bowl with pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds, and pine nuts to create a nutrient-rich cookie base.

    3. Prepare the Dried Apricots:
Finely chop the dried apricots and add them to the bowl of mixed nuts and seeds for natural sweetness and added fiber.

    4. Mix the Wet Ingredients:
In a separate bowl, whisk the egg white until frothy. Add the natural honey and a pinch of salt, and whisk until well combined to create the binding agent for your flourless, sugar-free cookies.

    5. Combine Ingredients:
Pour the egg white and honey mixture over the nuts, seeds, and dried apricots. Mix everything together until all ingredients are well coated, ensuring even distribution for your healthy cookie recipe.

    6. Shape the Cookies:
Using a tablespoon, scoop out the mixture and form it into small balls or mounds. Place them on the prepared baking sheet, pressing down lightly to flatten them a bit, shaping them into perfect healthy energy cookies.

    7. Bake:
Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown. Keep an eye on them to prevent burning, ensuring they stay healthy and delicious.

    8. Cool:
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

    Storage Tips for Healthy Cookies:
Store these healthy energy cookies in an airtight container at room temperature for up to a week. They can also be refrigerated for longer freshness, maintaining their healthy and sugar-free qualities.

Enjoy your delicious, healthy, energy-boosting cookies! This recipe is perfect for a nutritious snack or dessert without any added sugar or flour.
