These Hawaiian Pineapple Carrot Muffins are a perfect blend of tropical pineapple and earthy carrots, topped with a luscious cream cheese frosting. Ideal for breakfast, snack, or a tropical dessert, they’ll transport you straight to the islands with every bite!

Ingredients:

1 cup finely grated carrots

1/2 cup crushed pineapple (drained)

1 1/2 cups all-purpose flour

2 large eggs

1/2 cup vegetable oil

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup granulated sugar (adjust to taste)

1/2 cup chopped walnuts (optional)

1/2 cup shredded coconut (optional)

For the Cream Cheese Frosting:

8 oz cream cheese (softened)

1 teaspoon vanilla extract

1/2 cup powdered sugar

For Garnish:

Pineapple chunks

Instructions:

1. Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners for easy baking.

2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, baking soda, salt, cinnamon, and nutmeg. Whisk well for even distribution.

3. Mix Wet Ingredients: In a separate bowl, beat the eggs until fluffy. Add the vegetable oil and vanilla extract, and mix until fully incorporated.

4. Combine Wet & Dry Ingredients: Pour the wet mixture into the dry ingredients and stir until just combined be careful not to overmix!

5. Fold in the Extras: Gently fold in the grated carrots, crushed pineapple, and if you like, the chopped walnuts and shredded coconut for added texture and flavor.

6. Prepare the Muffins: Divide the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

7. Bake: Bake the muffins for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool: Remove the muffins from the oven and allow them to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

9. Prepare the Frosting: While the muffins cool, beat the softened cream cheese in a medium bowl until smooth. Gradually mix in the powdered sugar and vanilla extract until the frosting is light and fluffy.
