    Grilled Salmon with Mango Salsa and Cilantro Rice

     

    Grilled Salmon with Mango Salsa and Cilantro Rice

     

    This Grilled Salmon with Mango Salsa and Cilantro Rice is a perfect blend of flavors and colors. The savory, smoky salmon pairs beautifully with a vibrant mango salsa that’s both sweet and tangy. With a base of fluffy jasmine rice and a touch of fresh cilantro, this dish is light, refreshing, and satisfying. Ideal for a healthy, easy-to-make dinner or a summer gathering! Plus, the added lime juice brings a zesty finish that enhances every bite.

    Ingredients:

    For the Salmon:

    4 salmon fillets

    1 tbsp fresh lemon juice

    2 cloves garlic, minced

    1/2 tsp chili powder (optional, for a spicy kick)

    Salt and black pepper, to taste

    1 tbsp olive oil

    For the Mango Salsa:

    1 ripe mango, diced

    1/2 cup diced tomatoes

    1/4 cup red onion, finely chopped

    1 avocado, diced

    2 tbsp fresh cilantro, chopped

    Juice of 1 lime

    Salt and pepper, to taste

    For the Rice:

    2 cups cooked white or jasmine rice

    1 tbsp fresh cilantro, chopped (for garnish)

    Instructions:

    1. Prepare the Mango Salsa:

    In a medium bowl, combine diced mango, tomatoes, red onion, avocado, and chopped cilantro.

    Add lime juice, season with salt and pepper, and gently toss. Set aside for flavors to meld.

    2. Marinate the Salmon:

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, chili powder, salt, and pepper.

    Brush this marinade over the salmon fillets. Let them marinate for 15-20 minutes to infuse flavor.

    3. Grill the Salmon:

    Preheat your grill or grill pan over medium heat.

    Grill each salmon fillet for 4-5 minutes per side, or until the salmon easily flakes with a fork and has a golden crust.

    4. Assemble the Dish:

    Serve each grilled salmon fillet over a bed of cooked white or jasmine rice.

    Spoon the fresh mango salsa over the salmon and garnish with extra avocado slices and chopped cilantro.

    5. Serve & Enjoy:

    Add a lime wedge for extra zest, and dig into this colorful, tropical-inspired meal!
