Garlic Parmesan Roasted Potatoes Recipe
These Garlic Parmesan Roasted Potatoes are golden, crispy, and packed with flavor. With fresh garlic, Italian seasoning, and plenty of Parmesan cheese, this is the best roasted potato side dish for dinner, holidays, or parties.
Ingredients:
2 lbs baby potatoes (Yukon Gold or red potatoes), halved or quartered
3 tbsp olive oil
6 garlic cloves, minced
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
½ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Season potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and half of the Parmesan cheese.
Arrange & roast cut-side down on the baking sheet. Bake 35–40 minutes, flipping halfway, until golden brown and crispy.
Finish & serve by sprinkling with the rest of the Parmesan cheese and fresh parsley.

Soak cut potatoes in cold water for 20 minutes, then dry well.
Always roast with the cut-side down first.
