Ingredients:
– 4 ribeye or sirloin steaks (1-inch thick)
– Salt and freshly ground black pepper, to taste
– 2 tablespoons olive oil
– 1 pound baby potatoes, halved (or quartered if large)

– 5 cloves garlic, minced
– 1 teaspoon fresh thyme, finely chopped
– 1 teaspoon fresh rosemary, finely chopped
– 1 teaspoon fresh parsley, finely chopped
Directions:
Roast the Potatoes:
1. Preheat your oven to 400°F (200°C).
2. In a large ovenproof skillet or on a baking sheet, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper.
3. Roast the potatoes for 20-25 minutes, stirring halfway through, until they’re crispy and golden brown.
Cook the Steaks:
1. While the potatoes are roasting, season the steaks generously with salt and pepper.
2. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the steaks.
