Ingredients for Thai Coconut Chicken Soup:

1 tablespoon coconut oil

1 onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 stalk lemongrass, smashed and cut into 2-inch pieces

3 cups chicken broth (low-sodium preferred)

1 can (14 oz) full-fat coconut milk

1 pound chicken breast, thinly sliced

200 grams fresh mushrooms, sliced

2 cups fresh spinach, chopped

2–3 tablespoons fish sauce (adjust to taste)

Juice of 1 lime

Fresh cilantro leaves, for garnish

Red chili slices or Thai bird’s eye chili, for garnish

 

How to Make Tom Kha Gai (Step-by-Step):

1. In a large pot, heat coconut oil over medium heat.

2. Sauté the onion, garlic, and ginger until soft and fragrant (about 3–4 minutes).

3. Add the lemongrass and chicken broth. Bring to a gentle simmer.

4. Pour in coconut milk, then add the sliced chicken breast. Cook for 10 minutes until the chicken is tender.

5. Stir in mushrooms and spinach. Simmer for another 5 minutes until vegetables are cooked.

6. Season the soup with fish sauce and lime juice to balance the flavors.

7. Remove lemongrass stalks before serving.
