Instructions:
Preheat your oven to 350°F (176°C). Grease a 9-inch springform pan with non-stick baking spray and line the bottom with parchment paper.
For the Brownie
Combine flour, cocoa powder, baking powder, and salt in a medium-sized bowl.
In a large mixing bowl, blend oil, sugar, and vanilla extract until well combined.
Incorporate eggs into the mixture and blend until smooth.
Gradually add dry ingredients to the wet mixture, mixing until well combined without overmixing.
Pour the batter into the prepared pan, spreading it evenly. Bake for 30-35 minutes, or until a toothpick comes out with a few crumbs. Cool the brownie in the pan for 10-15 minutes, then transfer to a cooling rack.
For the Cheesecake
Beat cream cheese and sugar until smooth. Add sour cream, lemon juice, and vanilla extract; beat until smooth.
In another bowl, whip heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Carefully fold whipped cream into the cream cheese mixture in two parts until well combined.
Spread the cheesecake mixture over the cooled brownie in the pan. Refrigerate until firm, about 4-5 hours.
For the Topping
Whip heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread whipped cream on top of the cheesecake, then top with sliced strawberries. Refrigerate until ready to serve. Best if eaten within 4-5 days.
