Crispy Onion Bites with Cheesy Breadcrumb Crust

Ingredients:
- 2 large onions, thinly sliced (about 1/4-inch thick)
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1 cup milk
- 2 cups shredded sharp cheddar cheese (divided)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the parchment paper with some olive oil.
- In a large bowl, whisk together the flour, salt, and pepper. In another bowl, whisk the eggs and milk.
- Set up an assembly line for dipping your onions: flour mixture, egg mixture, and a final bowl containing the breadcrumbs, 1 cup of the shredded cheddar cheese, and the grated Parmesan cheese. Toss to combine the cheese and breadcrumbs.
