    Crispy Onion Bites with Cheesy Breadcrumb Crust

     

    Crispy Onion Bites with Cheesy Breadcrumb Crust

    Get ready for a delightful appetizer or side dish that’s bursting with flavor! These crispy onion bites are coated in a cheesy, flavorful breadcrumb mixture and baked to golden perfection.

    Ingredients:

    • 2 large onions, thinly sliced (about 1/4-inch thick)
    • 1 cup all-purpose flour
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 eggs, beaten
    • 1 cup milk
    • 2 cups shredded sharp cheddar cheese (divided)
    • 1 cup breadcrumbs
    • 1/2 cup grated Parmesan cheese
    • 2 tablespoons fresh parsley, chopped
    • 2 tablespoons olive oil

    Instructions:

    1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the parchment paper with some olive oil.
    2. In a large bowl, whisk together the flour, salt, and pepper. In another bowl, whisk the eggs and milk.
    3. Set up an assembly line for dipping your onions: flour mixture, egg mixture, and a final bowl containing the breadcrumbs, 1 cup of the shredded cheddar cheese, and the grated Parmesan cheese. Toss to combine the cheese and breadcrumbs.
    4. Dip each onion slice first in the flour mixture, then coat it completely in the egg mixture. Finally, dredge the onion slice in the cheesy breadcrumb mixture, making sure it’s evenly coated.
    5. Arrange the coated onion slices on the prepared baking sheet in a single layer. Drizzle with a little more olive oil for extra crispness.
    6. Bake for 20-25 minutes, or until the onion bites are golden brown and crispy.
    7. Remove from the oven and sprinkle with the remaining 1 cup of shredded cheddar cheese and the chopped fresh parsley.
    8. Serve hot and enjoy!

    Tips:

    • For a spicier kick, add a pinch of cayenne pepper to the flour mixture.
    • If the breadcrumbs seem too dry, add a tablespoon or two of milk to moisten them slightly.
    • You can substitute another type of cheese for the cheddar, such as mozzarella or Gruyere.
    • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven before serving.
