    Crispy Cherry Cheesecake Chimichangas

     

     

    Indulge in the perfect blend of crispy and creamy with these Cherry Cheesecake Chimichangas! Soft tortillas are filled with a luscious cream cheese mixture and sweet cherry pie filling, then fried to golden perfection. Rolled in a cinnamon-sugar coating, each bite offers a delightful contrast of textures and flavors. These chimichangas make a delicious dessert or special treat that’s sure to impress.

    Ingredients:

    – 6 (8-inch) soft flour tortillas
    – 8 oz. cream cheese, softened
    – 4 teaspoons sugar
    – 1 teaspoon vanilla extract
    – 1 ½ cups cherries from cherry pie filling
    – Vegetable oil, for frying
    – 1 tablespoon cinnamon
    – 1/2 cup sugar

    Instructions:

    1. Prepare the Filling: In a bowl, blend the softened cream cheese, sugar, and vanilla extract until the mixture is smooth and creamy.

    2. Spread the Filling: Evenly divide the cream cheese mixture among the 6 tortillas, spreading it generously across the lower third of each.

    3. Add the Cherries: Place ¼ cup of cherry pie filling in the center of the cream cheese layer on each tortilla.

    4. Roll Them Up: Fold in the sides of each tortilla, then roll it up tightly like a burrito. Secure each one with a toothpick to keep it closed.

    5. Mix Cinnamon-Sugar: In a shallow dish, combine the 1/2 cup sugar with 1 tablespoon of cinnamon and set it aside.

    6. Fry the Chimichangas: Heat about 2-2 1/2 inches of vegetable oil in a deep saucepan over medium-high heat.

    7. Cook to Perfection: Fry the chimichangas in batches, turning them as needed, until they’re golden brown and crispy, which should take about 2-3 minutes.

    8. Drain and Coat: Once fried, transfer the chimichangas to a plate lined with paper towels to drain, then roll them in the cinnamon-sugar mixture.

    9. Serve and Enjoy: Carefully remove the toothpicks before serving.
