Creamy Tuscan White Bean Soup

Ingredients:
¼ cup extra virgin olive oil
3 medium shallots, finely chopped
5 cloves garlic, minced
2 carrots, chopped into coins
2 stalks celery, diced
1 tbsp tomato paste
2 tsp kosher salt
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1 tsp dried thyme
1 tsp red pepper flakes
½ tsp black pepper
2 (15 oz) cans cannellini beans, drained and rinsed
2 bay leaves
4 cups water
3 cups fresh spinach
Instructions:
1. Heat olive oil in a large pot over medium heat. Add shallots and garlic, cover partially, and cook until soft and translucent.
2. Add carrots and celery. Sauté for about 10 minutes, stirring occasionally until slightly softened.
3. Stir in tomato paste, salt, basil, oregano, parsley, thyme, black pepper, and red pepper flakes. Cook for 5 minutes to develop flavors.
4. Pour in cannellini beans, bay leaves, and water. Stir well and let simmer for 20 minutes.
5. Blend 1 cup of the soup until creamy, then return to the pot. Stir in fresh spinach and simmer for another 10 minutes until the spinach wilts.
6. Remove bay leaves and serve warm with crusty bread.
7. Store in an airtight container in the fridge for up to 5 days.
