    Creamy Peri-Peri Chicken Pasta Recipe

     

    Creamy Peri-Peri Chicken Pasta Recipe

     

    Creamy Peri-Peri Chicken Pasta is a delicious fusion of bold, spicy flavors and comforting creaminess. Tender chicken, vibrant red peppers, and sweetcorn are simmered in a peri-peri spiced sauce, perfectly coating al dente pasta. Cream cheese adds a luscious texture, balancing the heat with a rich, smooth finish. This one-pot wonder is quick, easy, and perfect for busy weeknights or meal prep. Enjoy it hot or cold, with the flavors getting even better the next day!

     

    Ingredients:

    2 tsp olive oil

    600 g chicken breast, chopped

    4 tsp peri-peri seasoning

    2 red peppers, sliced

    1 red onion, peeled and chopped

    2 garlic cloves, peeled and crushed

    750 ml chicken stock

    400 g canned chopped tomatoes

    250 g dried pasta

    100 g cream cheese

    198 g canned sweetcorn, drained

    Salt and pepper to taste

     

    Instructions:

    1. Sauté the Chicken: Heat olive oil in a large saucepan over medium-high heat. Add the chicken breast and 2 tsp of peri-peri seasoning. Stir and cook for about 5 minutes until the chicken is lightly browned.

    2. Cook the Veggies: Add the sliced red peppers, chopped red onion, and crushed garlic. Cook for another 5 minutes until the vegetables soften.

    3. Simmer the Sauce: Stir in the chicken stock, chopped tomatoes, the remaining peri-peri seasoning, salt, and pepper. Add the dried pasta and bring everything to a gentle simmer.

    4. Cook the Pasta: Cover the saucepan with a lid and cook for 15-18 minutes, stirring occasionally, until the pasta is al dente, and the sauce has thickened.

    5. Make it Creamy: Stir in the cream cheese and drained sweetcorn until everything is well combined and creamy. Adjust seasoning if needed.

     

    Pro Tips:

    Spice it Up: Love extra heat? Add a chopped red chili with the sliced peppers for an extra fiery kick.

    Pasta Shape Matters: Cooking time may vary based on the pasta you use. Stop cooking when the pasta is al dente and the sauce clings to it.

    Great for Leftovers: This creamy peri-peri pasta tastes even better the next day! Enjoy it hot or cold for lunch.
